North of Seven is part of the Canadian Pilsner Project, started by our good buds True Hostory Brewing. It's a collaborative cross-Canada effort to brew a Pilsner using 100% Canadian ingredients. When we were approached about the project, it was a no brainer for us. Not only do we love the idea of creating something uniquely Canadian, but we respect the hell out of Adam and Matt at True History and think they're brewing some of the best lagers in the country right now.
North of Seven was brewed with Gambrinus malts, the hops were Canadian Saaz from Myrtle Meadows and the yeast from Escarpment Labs. It's a beautiful and bright amber hue with a smooth but present malt backbone. The hops bring a beautiful bouquet of that classic spicy and woody Saaz characteristic with a unique, yet subtle, fruitiness. The bitterness is firm without being overwhelming. Truly one of our favourite lagers we have ever produced.
